I work with Sweet Success, an award-winning commercial bakery in Northampton, to source my sponges. This isn't a compromise - it's a strategic choice that elevates what I offer. By partnering with specialists who excel at creating flawlessly consistent, structurally sound sponges, I can dedicate myself entirely to my craft: hand-sculpting Belgian white chocolate florals and creating sculptural designs that stop traffic.

This collaboration also means your cake benefits from commercial bakery standards - rigorous food safety protocols, precise allergen control, and sponges engineered specifically to support the weight and artistry of luxury tiered wedding cakes.

Sweet Success Kitchen

Sweet Success works with premium ingredients including flour, eggs, nuts, Belgian chocolate, and dairy. Their kitchen isn't a dedicated free-from facility, and they use gluten, eggs, and dairy in all their cakes as essential ingredients for structure, moisture, and flavour.

They don't make gluten-free or vegan cakes. Wedding cakes need to be structurally sound when stacked and decorated with intricate sculptural work, and removing these key ingredients would compromise the integrity of the finished design.

What's Used in the Cakes

The Food Standards Agency lists 14 major allergens. Here's what's in the sponges I work with:

Gluten - Wheat flour (plain and self-raising) is used in all cakes.

Nuts - Sweet Success doesn't use peanuts or cashews. They do use ground almonds, hazelnuts, walnuts (in the carrot and orange cake), pecans, and pistachios.

Eggs - These go into all cakes.

Milk - Premium butter, buttermilk, cream, and cream cheese are used.

Soya - This is in the Belgian chocolate used.

Sulphur Dioxide - Sometimes found in dried fruit and bottled lemon juice, but rarely used.

Specific Diets

Vegetarian - All cakes are vegetarian-friendly, using vegetarian cheese and avoiding animal products like gelatine.

Vegan & Gluten-Free - Vegan or gluten-free cakes aren't available. The structural demands of tiered, sculpted wedding cakes require traditional ingredients.

Diabetic - Diabetic-specific cakes aren't offered. Wedding cake and buttercream aren't naturally diabetic-friendly, and diabetes affects everyone differently.
